- Snack: Greek yogurt with raspberries and granola

- Snack: String cheese and dried apricots

- Date Night

- Chicken Pot Pie
- Green salad
- Pineapple
Your meals look so simple and light and yummy! I am trying to ease up on my cooking a bit. It is a lot of cooking these days! Do you ever make rice or potatoes or veggies as side dishes? I am afraid chips and fruit might not fill my family up, but I am getting tired of making full meals. I am going to try the bagel sandwiches and enchiladas!
Teresa I feel like I’m doing double the cooking for some reason! My husband is home ALL-the-TIME but before he was only commuting into work twice a week so it shouldn’t feel that differently. Then again the amount of milk I go through now seems crazy just because one child is not getting it at school! I’m also going to try the sandwiches (but on homemade bread I made Friday) and the enchiladas using a rotisserie chicken. With the leftover chicken I will make the potpies.

Ooh I love no bake cookies so I’m going to have to try that healthier version. Also, I remember making zucchini cookies for the first time and thinking there was no way my picky 6-year-old would like them–he’d see through me for sure–but he loved them! I think I made the version from Sweet Peas Meals but I’ll have to try yours!
