I love a crockpot meal but summer crockpot meals hold a special place in my heart!
There’s nothing better than coming home from a summer adventure on the lake or water park or out with friends and finding dinner just about ready for you!
Plus, it doesn’t heat up your house the way turning on the oven or stove does!
Summer is probably NOT the time you’re looking for a thick stew or chili, so these summer crockpot recipes are perfect for the warm summer months when you want your food to match the season AND you want it to be mostly hands off!

Easiest Crockpot French Dip Sandwiches
This is basically Bart’s favorite meal on earth. Also my girls all love it, and then can’t really understand what’s going on when we have sandwiches that don’t have a dip. And so freaking easy. Throw a seasonal fruit with it and a side salad and you are good to go!
Crispy Carnitas with Summer Corn Salsa
This one is screaming summer! The fresh corn salsa, paired with a crispy pork and jalapeno crema, all wrapped in a warm tortilla. My job here is done.
Slow Cooker Shredded Beef and Pepperoncini Sandwiches
If I had to choose a very favorite dinner, it might be these sandwiches. Oh man, I never get tired of them – they are SO good. If we have extra meat leftover, I scramble them with eggs for breakfast or put them in a tortilla shell.
Crockpot Honey Garlic Chicken
This one is a crowd pleaser and so easy! I love that the recipe calls for chicken thighs, which tend to be cheaper and more moist than chicken breasts. Serve with a side of broccoli and rice to round out a full meal.
Crockpot Philly Cheesesteaks
Philly Cheesesteaks are a classic sandwich that you really can’t go wrong with. Throw all of the ingredients in the crockpot and let them cook all day long. When you are ready to eat, stuff the meat into a hoagie roll, top with provolone, wrap in foil and pop in the oven for a few minutes. This makes a great meal if you have everyone eating at different times throughout the evening.
Chile Verde Nachos
If you are having people over, this one is a perfect way to feed a lot of mouths, without spending the day in the kitchen. Add in a few yummy toppings like avocados, olives and tomatoes to make it extra delicious.
Thai Beef Crockpot Curry
I first made this Thai Beef Curry crockpot recipe more than a decade ago and it is so good. It’s really hard to mess up and always tastes delicious! And I can never say no to curry, even in the summer.

You can make this recipe super simple or a little more complicated whether you want to buy the Kung Pao sauce or make it from scratch. Regardless, it’s delicious and full of nutrients!

My sister Merrick always makes this for one dinner during our family reunion and it’s always a huge hit. I love that you can make it into a burrito or a salad, and it can slowly cook all day while we are out and about having fun! The easiest dinner!

This is the easiest meal on the planet. Frozen meatballs, jarred marinara (Rao’s is 100% the best) and two minutes of prep…yes please! I follow this recipe loosely because sometimes I skip adding the spices if I have this garlic spread to put on the rolls and pop in the oven to toast.
Creamy Coconut Chicken Tikka Masala
My husband and I love Indian food and my kids love naan bread! This one is easy to break up into kids sections (rice, naan, chicken), but serving it regular is absolutely divine too! Give this one a go if you are looking for something that tastes like take-out from home!

I could eat anything with sundried tomatoes in it! This chicken in creamy sauce has all the best flavors and I feel good about the fact that it has spinach in it! We love this served over noodles, but would also be great over rice, cauliflower rice, gnocchi, or even with just some crusty bread.
Pulled Pork with Dr. Pepper
My husband usually loves to use his smoker to make pulled pork, but some summer days it seems like a lot of work to get it all ready – so this is our easy backup! We love using this for pulled pork sandwiches with slaw, and with the leftovers we make sheet pan tacos or BBQ pork pizza.

This is such a fantastic list! Some of these I already have recipes for and just needed to remember to make them again, and others look so tasty. I can’t wait to try the chicken taco salad recipe.
