Day 2: I’m Rocking NaBloPoMo

One of the things I like about Texas is that the weather reminds me of Las Vegas half of the year and of Wisconsin the other half (if you think I am making this up, my dad came to visit in April and said, WITHOUT PROMPTING, “Wow, it smells like Wisconsin here.”)

Today, I sat in my car during lunch and read with the windows down. It was glorious (although, I did freak out a bit when a bee started flying around and came in the window a few times).

(Little aside: Last week, I went to the library, opened the car door to put my books in and a bee flew inside too. I got back out of the car and was leaping around like a crazy person to avoid it until I realized there were two guys across the street not even pretending not to be laughing at me).

Anyway, Texas is fabulous in November.

Oh, you didn’t come here to read about weather? Whoops. . . my bad.

The recipe: Strawberry Bread. It’s a recipe my mom has made for years. She often serves it with vanilla ice cream as a dessert, but I prefer to eat it for breakfast. Or lunch. Or a snack. Or with ice cream.

I made this twice in the first few months that I lived on my own in an apartment. And both times it was a miserable failure. I finally called my mom and realized I’d copied the recipe down wrong. Whoops. After that, it was smooth sailing until I got married and moved into an apartment with a totally dysfunctional stove and I had to bake EVERYTHING in the toaster oven. And this bread was a little too tall and got pretty burnt on top. Oh, I was displeased. Fortunately, it’s been incident-free baking from there on out.

By the way, this recipe is specifically for One Smart Cookie, who bakes, but doesn’t cook. Her NaBloPoMo thing is posting an embarassing story from her past daily, so you may want to check it out for the sheer entertainment value I’m sure will be provided.

Strawberry Bread

1 ½ cup flour
½ tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
1 cup sugar
1 cup strawberries
2 eggs
2/3 cup oil
2/3 cup chopped nuts (I think pecans are best, but really, I usually just skip the nuts altogether)

Defrost strawberries in the microwave and then mash with a fork.

Combine all ingredients and stir until smooth.

Pour into a greased loaf pan and cook at 350 for 1 hour.

    Had to laugh at your bee story. I’m pretty sure all of us have done that. And, thank goodness there are other car readers out there! People here (Idaho) think I’m nuts because I sit in my car in the driveway and read. But, think about it – even if it is bitterly cold outside and the sun is shining, the inside of car feels toasty. What better way to soak up the much needed sunlight?!

    Oh, and I’m going to try some of your recipes, too!

    I don’t have a car so I don’t do much car reading, but reading outside is bliss when the conditions are right. My freshman year I took the bus home from BYU each day and spent many, many hours reading at bus stops. Tolkien (my first time through), Anna Karenina, Don Quixote, Ibsen, Goethe. Mmm.

    janssen, your bread is baking in my oven as I type! I had to make it with Splenda as my husband is diabetic, but it certainly smells good.

    Hey I just ran across your blog from a friend’s link – LOVE IT!
    I knew the ingredients and everything looked familiar – I make this same recipe – except substitute the strawberries with raspberries and bananas. Yours still sounds better though.
    Anyway, just wanted you to know I liked your blog. 🙂
