One of the things I like about Texas is that the weather reminds me of Las Vegas half of the year and of Wisconsin the other half (if you think I am making this up, my dad came to visit in April and said, WITHOUT PROMPTING, “Wow, it smells like Wisconsin here.”)
Today, I sat in my car during lunch and read with the windows down. It was glorious (although, I did freak out a bit when a bee started flying around and came in the window a few times).
(Little aside: Last week, I went to the library, opened the car door to put my books in and a bee flew inside too. I got back out of the car and was leaping around like a crazy person to avoid it until I realized there were two guys across the street not even pretending not to be laughing at me).
Anyway, Texas is fabulous in November.

The recipe: Strawberry Bread. It’s a recipe my mom has made for years. She often serves it with vanilla ice cream as a dessert, but I prefer to eat it for breakfast. Or lunch. Or a snack. Or with ice cream.
I made this twice in the first few months that I lived on my own in an apartment. And both times it was a miserable failure. I finally called my mom and realized I’d copied the recipe down wrong. Whoops. After that, it was smooth sailing until I got married and moved into an apartment with a totally dysfunctional stove and I had to bake EVERYTHING in the toaster oven. And this bread was a little too tall and got pretty burnt on top. Oh, I was displeased. Fortunately, it’s been incident-free baking from there on out.
By the way, this recipe is specifically for One Smart Cookie, who bakes, but doesn’t cook. Her NaBloPoMo thing is posting an embarassing story from her past daily, so you may want to check it out for the sheer entertainment value I’m sure will be provided.
1 ½ cup flour
½ tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
1 cup sugar
1 cup strawberries
2/3 cup oil
2/3 cup chopped nuts (I think pecans are best, but really, I usually just skip the nuts altogether)
Defrost strawberries in the microwave and then mash with a fork.
Combine all ingredients and stir until smooth.
Pour into a greased loaf pan and cook at 350 for 1 hour.
