Double Chocolate Streusel Muffins

These double chocolate streusel muffins are practically perfect. They are filled with chocolate, but not overly sweet and topped with a crunchy delicious streusel topping.

Back when Ella was three, I explained the basic idea of nose blowing to her.

She immediately picked it up (which shocked me because, no kidding, I was in college before I really mastered this skill) and it came in super handy a few weeks later when I was working in my office after the girls had gone to bed, and suddenly heard Ella start shrieking for me. I dashed in and she said, “I put it up my nose! I can’t get it out!”

I tried to not freak out when I discovered that “it” was a tiny wooden checker piece that she’d pushed up as far as her finger could reach. (“I just wanted to see if it would fit,” she told me after the fact).

I held her other nostril closed, instructed her to blow her nose, and three seconds later, was holding that checker piece.

My parenting advice, obviously, would be as follows: stop worrying about teaching your kid their numbers, letters, and colors, and focus on nose-blowing techniques instead.

With cold season coming on fast, it’s not a bad skill to learn.

And if everyone does have to have colds, the other good thing to have in your back pocket besides nose-blowing skills and Kleenex is a good muffin recipe.

These double chocolate streusel muffins are some of my long-time favorites.

And not just because any recipe for streusel muffins is the key to my heart.

These ones are fantastic – light and airy and not overly sweet, with a crunchy top. Basically muffin nirvana right here.

I especially love these chocolate streusel muffins because they are definitely muffins (not cupcakes masquerading as muffins), so they’re perfect for snacks or breakfast. Or both.

Also, if there is a frosted cupcake, my children basically eat the top off and then refuses to eat any of the actual cupcake (for birthdays, I should just start squirting mounds of frosting into muffin liners and call it good).

But streusel muffins?

My children actually eat the entire thing.

Double Chocolate Streusel Muffins

These double chocolate streusel muffins are practically perfect. They are filled with chocolate, but not overly sweet and topped with a crunchy delicious streusel topping.

Ingredients

Muffin Batter:

  • 6 tablespoons butter
  • 2/3 cup semi-sweet chocolate chips divided
  • 2 cups flour I used white wheat
  • 2/3 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt increase to 1/2 teaspoon if your butter is unsalted
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 1/2 teaspoons vanilla

Streusel:

  • 1/4 cup packed brown sugar I used dark brown and it was amazing. But either is fine
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts I used a mix of pecans and almonds
  • 1 tablespoon butter melted

Instructions

  1. Preheat oven to 375 degrees. Grease muffin tin and set aside.
  2. In a saucepan over medium-low heat or in the microwave in a microwave-safe bowl, melt the butter and HALF of the chocolate chips together.
  3. In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda and salt.
  4. Add the buttermilk, egg, and vanilla to the butter/chocolate mixture, stir to combine and pour into dry ingredients. Stir to combine, then fold in remaining half of chocolate chips.
  5. Fill muffin cups 3/4 of the way full.
  6. Mix together struesel ingredients in a small bowl until well-combined. Divide evenly over the tops of the muffins. Bake for 18-22 minutes, or until the tops spring back when gently pressed. Let cool for about 10 minutes.
  7. Serve warm with a good book, some hot tea, and a box of Kleenex.

    Henry is excellent at blowing his nose, due to his many allergies which have his nose going constantly. Spencer, who has no allergies, is at a complete loss whenever he gets a cold even though he's 2.5 years older. It's just not a skill he's mastered.

    Just in case you ever have a child with something stuck in their nose again….my middle daughter decided it was a good idea to shove a bead up her nose when my mother-in-law was watching my kids one night. (This was several years ago now – my 10 year old does know better!) She couldn't blow it out because it was stuck so far up – and the bead had a hole in the middle which let the air go right through it….we ended up using a dental pick. Worked great! But it was slightly traumatic – and memorable!

    Ella and I should share cupcakes. I do not like frosting at all (this is an abomination to my dad), so I tend to scrape it off and just eat the cake. We'd make a good team.

    Glad you avoided the ER. Alas, I put bean up my nose as a child and the doctors were afraid it would sprout if they didn't get it out. I remember-ish thinking, "Cool!" I'm sure my parents were much less enchanted.

    I also like muffins that are muffins, instead of a sheep in wolf's frosting cupcakes. I may have to try these!

    I'm sure you don't mean that this batter makes 12-16 dozen muffins. That would be miraculous muffin mix!

    Thankfully, we've avoided any objects stuck in noses/ears/throats, etc. But now that we have our 3rd (10mths) and 2 older siblings with tiny toys, I'm so nervous about it!

    I think I failed at the whole nose-blowing skill. Several of you left home without mastering this. Glad to hear you've figured it out on your own.

      It is for Target only. They basically have extra digital coupons – you can just search for an item and if there is a deal, it'll prop up. It's usually a percentage of the total price off. You can stack it with their text messaged coupons and paper coupons.

    Hi, Just made these. The batter was really thick, almost like cookie drought except that the 1tbsp baking soda made it very airy and voluminous. Is it supposed to be like that or are we missing an egg or two.
    Will know how they turn out once they're out of the oven.

    How'd they turn out? They do have one egg (listed in the ingredients), but other than that, it should be right. And the batter does turn very fluffy with the soda.

    Great muffins! I subbed half of the butter with coconut oil and they were delish. I doubled the recipe so I could freeze some for my kids easy school day breakfasts. It made 24 regular size muffins and 4 Jumbo’s.

    These muffins are amazing! I added 1 Tbsp. of espresso powder to the dry ingredients, and a sprinkle more to the streusal topping.

    Re: only eating the top of a cupcake: 1. That’s the best part and 2. Williams Sonoma makes (or made) muffin top pans, so you don’t even have to bother with the bottom because there isn’t one.

    This post seriously made me laugh because my husband will never let me forget that it was my college roommate who taught me how to blow my nose. My mom claims she taught me and I’m sure she did, but it didn’t stick until college. Glad I’m not alone!
