Great to Eat While You Watch Others Sweat On Stage

I mysteriously got sucked into So You Think You Can Dance this summer. First, we went to Bethany and Ryan’s and watched it there, where Bethany got us up to speed on which dancers we should like and which ones we should boo. Then we saw part of an episode at the Lauritzens. A week or two later, we watched an episode with Brian and Ralphie and I suddenly found myself caring deeply who won.

So, on Wednesday night, we invited ourselves over to Brian and Ralphie’s to watch the second to last week of performances. And to make up for being so rude, I brought along these Chocolate Peanut Butter Oat bars.

They were incredibly easy to toss together and they were delightful, although not as rich or sweet as I’d expected (although I am certain the calorie count would beg to differ). I’m sure I’ll make them again in the future because 1) easy, 2) things I have around, 3) yum.

Also, the cookie part of the oatmeal bars is surprisingly soft – I expected it to be a bit more crispy or dense. Also, if you look at the original recipe, you’ll notice that I halved the recipe for the bars, but kept the same amount of chocolate frosting. That’s just how I am. It was not at all too much frosting.

Oatmeal Bars

You need to try these! So darn good!

Oatmeal Bars:

  • 1/4 cup butter
  • 1/6 cup peanut butter I used crunchy
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1/8 cup milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup flour
  • 1 cup oatmeal

Peanut Butter layer:

  • 1/4-1/3 cup peanut butter I used creamy
  • Chocolate Frosting:
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 2 tablespoons cocoa powder
  • 1 cup powdered sugar


  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine butter and peanut butter until smooth. Add sugars, vanilla, eggs, milk, salt, soda, flour and oatmeal. Press mixture into greased 6 by 9 and bake for about 20-25 minutes, or until puffed and browned.
  3. Let the bars cool for a few minutes and then peanut butter on top. If you do it right away, it kind of squishes the bars. And I don't like squished bars.
  4. After the bars have cooled for 10 minutes or so, combine butter and milk in a small saucepan over low heat until butter is melted. Stir in cocoa powder and powdered sugar. Spread gently on the top of the bars.


On the way home, I voted nearly 100 times. I’m so lame.

    Dude, you can come watch it at my house if you bring a treat :). Those sound SO good. Blaine is doing weight watchers and the other day I figured out how many “points” were in the sheet cake. Just so you know, I get 20 points a day total and the sheet cake had over 75 points in just butter (to say nothing of the sugar, etc.). Crazy!

    I’m totally sucked in to SYTYCD as well. I’m really happy with the final 4; this week’s finale will be really interesting.

    You guys know Ryan and Bethany?! What a small Mormon world. Bethany and I were neighbors at Liberty Square years ago.

    oh my heck.I am deeply troubled tat Chelsea and Will are gone. I like all of the other dancers, but I just loved watching those two. RGGGG! I’m glad you watch!
