Three Ingredient Mint Chocolate Chip Ice Cream Pie
Pi Day is this weekend and if you know us, you know that Pi Day is a BIG deal for us.
This will be our 9th year hosting a Pi Day party and I can’t wait!

And every year, we always include a mint chocolate chip ice cream pie because it is, hands down, Bart’s favorite pie on earth.
I make one every year for Thanksgiving and it’s kind of crazy that I don’t have the recipe here on Everyday Reading.
I mean, calling it a recipe miiiiiight be a little bit of a stretch because. . . you basically just buy three ingredients, assemble them and put it in the freezer until pie time.
It is always one of the most popular pies – it feels less heavy than lots of other pies – and it just is a solid crowdpleaser ever time.
Here’s how to make a Mint Chocolate Chip Ice Cream Pie!

Mint Chocolate Chip Ice Cream Pie
This Mint Chocolate Chip Ice Cream Pie is a family favorite and couldn't be easier! Just assemble the three ingredients and freeze!
Ingredients
- Oreo pie crust (chocolate graham cracker or even plain graham cracker works too)
- 1 half gallon mint chocolate chip ice cream
- 1/3 cup fudge sauce heated
Instructions

Let the ice cream soften on the counter for 10-15 minutes. Scoop in gently into the pie crust (you probably won't need it all) and smooth with a spatula.

Drizzle the hot fudge over the top. Cover the pie (I use the cover that comes with it) and freeze for 3-4 hours or until solid.

Slice and serve immediately.
Could that be easier?

Smitten kitchen’s hot fudge sauce recipe is SO GOOD and would take this to another level. I use it to make spumoni pie, which is basically the same as this recipe but with two kinds of ice cream, ha.
This is my all time favorite dessert. If you stir Oreo chunks and crumbs into the ice cream before you put it in the pie crust (homemade Oreo crust is my personal fav.) it takes this dessert up another notch. Mmm 😋
The BEST mint chocolate chip ice cream is Tillamook’s Mint Chocolate Chip. The chocolate is chunks and they are chewy! So amazing!

My mom used to make this and the same recipe but with peppermint ice cream around Christmas (green and red) and both were SO good!
