Oatmeal Bars

You need to try these! So darn good!

Ingredients

Oatmeal Bars:

  • 1/4 cup butter
  • 1/6 cup peanut butter I used crunchy
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1/8 cup milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup flour
  • 1 cup oatmeal

Peanut Butter layer:

  • 1/4-1/3 cup peanut butter I used creamy
  • Chocolate Frosting:
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 2 tablespoons cocoa powder
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine butter and peanut butter until smooth. Add sugars, vanilla, eggs, milk, salt, soda, flour and oatmeal. Press mixture into greased 6 by 9 and bake for about 20-25 minutes, or until puffed and browned.
  3. Let the bars cool for a few minutes and then peanut butter on top. If you do it right away, it kind of squishes the bars. And I don't like squished bars.
  4. After the bars have cooled for 10 minutes or so, combine butter and milk in a small saucepan over low heat until butter is melted. Stir in cocoa powder and powdered sugar. Spread gently on the top of the bars.
