Ingredients

  • 1/2 cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 4 very ripe bananas peeled
  • 4 tablespoons buttermilk
  • 1 teaspoon vanilla
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees. Generously grease a standard-size loaf pan and set aside.
  2. In a stand mixer, beat together the butter and sugar. Add the eggs, the bananas (no need to mash them beforehand), the buttermilk and the vanilla. Mix until well-combined.
  3. Add the flour, baking powder, baking soda, and salt, then mix until just combined.
  4. Pour into your loaf pan and bake until the top is browned and a toothpick comes out cleanly, 60-75 minutes.
  5. Let cool in the pan and then remove carefully, slice, and serve.
