Pineapple Coconut Banana Muffins

Perfect for an afternoon at home! Plus they only require one-bowl!

Ingredients

  • 1 cup flour
  • 1/3 cup brown sugar
  • 1/3 cup granulated white sugar
  • 1/2 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup shredded coconut
  • 1 teaspoon vanilla
  • 1 egg
  • 1/4 cup oil
  • scant 1/4 cup buttermilk
  • 2 very ripe bananas mashed
  • 1 4 oz can crushed pineapple drained

Instructions

  1. Preheat oven to 350 degrees. Grease or line a 12-cup muffin tin and set aside.
  2. In a large mixing bowl, combine all ingredients and stir just until combined.
  3. Divide evenly between muffin cups and bake for 20-22 minutes, or until the tops are golden-brown and spring back when you gently press the top.
