Ingredients

In the crockpot:

  • 1.5 - 2 lb chuck roast
  • 1 package dry French onion soup mix
  • Water

For serving:

  • 4-6 ciabatta rolls
  • 4-6 slices provolone cheese
  • Mayonnaise
  • Lettuce leaves
  • Sliced tomatoes

Instructions

  1. Place the roast in the crockpot (I usually don't even defrost mine), pour the French onion soup mix over the top and then add enough water to just barely cover the roast.
  2. Let cook for 8-10 hours on low or 4-6 hours on high.
  3. Remove the meat and shred it with two forks.
  4. Strain the remaining liquid to remove bits of meat and excess fat and save for dipping sauce.
  5. Turn your broiler on low. Slice the rolls in half and spread mayonnaise on each side and place a slice of provolone cheese on the bottom half of each roll. Broil for about 4-5 minutes, until the cheese is bubbly and the bread is toasted.
  6. Fill each sandwich with shredded beef, a lettuce leaf and a slice or two of tomatoes and serve with a bowl of the dipping sauce.
  7. Enjoy!
