Does anyone else feel like lunch is the worst meal of the day when you stay at home?

I usually feel like I’ve JUST finished cleaning up breakfast, but I don’t want to put a lot of effort into prep because then I’ll have zero interest in making dinner.

I also almost always have yogurt and granola for breakfast, so I’m never in the mood for something sweet for lunch (like a peanut butter and jelly sandwich).

And I really want to eat something that’s both healthy and filling, so I’m not immediately spending quiet time sneaking into the pantry for a handful of chocolate chips.

No, I don’t ask much of my lunch at all.

Then my parents came to visit last fall and I made a quinoa and sweet potato bowl recipe thing for one of the meals. As usual, my proportions of ingredients were all out of whack so I was left with a big tupperware of quinoa and some sweet potatoes and bacon dressing.

After my parents left, I used the quinoa and sweet potatoes as a base for my lunches the next couple of days.

The first day, I added a fried egg and some goat cheese.

The next day, I chopped up some baby spinach and tossed in some sausage, then topped the whole thing with ranch.

Since then, I’ve started trying to prep a few things at the beginning of the week that I can mix and match for the next week so that lunch isn’t stressful for me (and so that it is delicious, obviously).

I roast a whole pan of vegetables (usually bell peppers, red onions, zucchini and squash) and cook up a small pot of quinoa and roast a few chicken breasts.

Then I make sure on my weekly shopping trip I pick up eggs, sausage, hash browns, lettuce, and baby spinach at Kroger. Through April 19th, you can pick up 2 Hillshire Farm sausages for $5 while supplies last (you can find your local Kroger store here).

When it’s lunch time, I can just start throwing things on a plate or a bowl until it looks good. If there’s something I want to cook to add, like a fried egg, hash browns, or sausage, I put those on to cook while I get the girls’ lunches out and by the time they are settled, my things are ready to go.

I love that it makes it simple for me to eat more vegetables and have enough protein to keep me full through the afternoon.

Here are a few of my favorite combos (and you can check out more recipes from Hillshire Farm here!):

  • Roasted vegetables, chopped baby spinach, sausage, feta and fried egg topped with Sriracha  
  • Hash browns, sausage, goat cheese, avocado 
  • Lettuce, diced chicken, avocado, and roasted vegetables with ranch dressing
  • Roasted sweet potatoes, shredded chicken, quinoa, ranch dressing
  • Sourdough toast, smashed avocado, roasted vegetables and fried egg with Sriracha 
For the last year, I’ve loved not having to think about breakfast because I have the same thing 99% of the time, and now I feel the same way about lunch – there’s enough variation that I don’t get sick of it, but easy enough that I can actually make it happen. 
Of course, the downside is that Ani has discovered how much she loves “juicy eggs” and now I always have to share with her. 
Fortunately, I like her. Even more than I like a delicious lunch.

    I really LOVE this idea! Thanks for posting, it's going to make lunches this week much healthier and probably just as easy as my usual sandwiches (after I shop and prep today).

    I'm totally the worst when it comes to lunch… And I feel like there are 50 more pressing issues I need to work on before I even get to this one (like putting away laundry more than once every six months), but should I ever get on the ball with lunch, I'm totally making this, it looks amazing!

    This is a great idea! I sometimes make a huge pot of soup on Sundays and keep it for all my lunches throughout the week. Or make a little extra food at supper so that I can have left overs for lunches. But this idea is also something I could prepare on Sundays and then mix and match to pack my lunches every week night to take to work the next day.

    I almost always have at least two meals of leftovers in the fridge, usually it's at least pieces from the night before that I can easily warm up for lunch. This is a huge departure for me, pre-Arizona I was going out to lunch 3 or 4 days a week with coworkers or friends and never EVER thought about lunch in the morning or the night before. I think I like this new eat-at-home situation, although I also miss someone else making and cleaning up lunch for me. Sigh. Hashtag: first world problems
